Peru doesn't have the marketing infrastructure of Colombia. It doesn't have Kenya's dramatic auction system or Ethiopia's mystique. What it has is geography that humbles: the Andes at 2,000 meters, smallholder farms tucked into cloud forest, and farmers who have grown coffee for generations without much outside attention.

That invisibility has kept Peru both under-priced and underestimated — which, for roasters paying attention, is an opportunity.

"Peru is what happens when remarkable farmers work in quiet, without an audience."

The Sunday Morning Coffee

We've been working with a washed Peruvian from Cajamarca that has stayed in our rotation longer than almost any other coffee. The cup is soft rather than strident: dried apricot and nougat, a gentle florality that doesn't announce itself but rewards a slower pace of drinking. It's the coffee you reach for on Sunday morning when there's nowhere to be.

On the Valenta 12, Peruvian coffees roast beautifully. The bean density at altitude creates good development potential, and because the flavor profile isn't chasing extremes, we have flexibility in roast degree — light roast emphasizes the fruit and floral; nudging toward medium brings out more milk chocolate and rounds the body into something especially approachable.
